2-3 carrots, diced
2-3 stalks of celery, diced
1 medium onion, diced
1 can northern or white beans
acine di pepe pasta
bulk italian sausage
frozen cheese tortellini
frozen chopped spinach
8- 14oz cans of chicken stock
sautee diced carrots, celery, and onion in a bit of oil over medium-low heat
when the vegetables are soft, add a couple of cans of broth.
turn up heat to medium high.
bring broth to a simmer.
add can of rinsed white beans.
add a couple more cans of broth.
bring to simmer.
when the broth is simmering, sprinkle 1/2 cup of acine di pepe into broth.
stir.
meanwhile, make mini balls out of the sausage.
when the acine di pepe has cooked, add the sausage.
add two more cans of broth.
continue to keep the broth at a simmer.
add frozen tortellini.
cook through.
when tortellini is cooked, add a couple handfuls of frozen spinach.
stir to wilt.
dish into bowl with a ladle.
eat.
